For the Caramel:
20 ml Water
For the Flan:
80gm Cooked U.S. Split Red Lentils
2ea Whole Eggs
4ea Egg yolks
30gm Condensed Milk
2gm Vanilla Extract
Place the sugar into a small pan and heat on medium heat until the sugar turns brown.
Add water carefully and stir to dissolve the caramel.
While hot pour some of the caramel into each ramekin.
Blend the cooked U.S. Split Red Lentils with the milk.
Put in a pot and bring to a boil.
Whisk the whole eggs and egg yolks with the sugar until it turns whitish.
Add the condensed milk and vanilla extract.
Very slowly add the hot U.S. Split Red Lentils–milk.
Strain and pour into the caramel-covered ramekins.
Set into a water bath and cook in the oven at 150°C for approximately 30 minutes or until done.
