Ingredients for U.S. Red Lentils:
10gm Olive Oil
20gm Chopped Garlic
1kg Cooked U.S. Red Lentils
To Taste Salt
To Taste Ground White Pepper
5gm Smoked Paprika
Ingredients for Mushrooms:
10gm Olive Oil
5gm Chopped Garlic
10gm Finely Diced Shallots
150gm Chopped “Chicken Leg” Mushrooms
50gm Chopped Fresh Shiitake Mushrooms
To Taste Salt
To Taste Ground Black Pepper
Directions
Method for U.S. Red Lentils:
Sauté the chopped garlic and shallots in the olive oil until translucent and cooked.
Set aside to cool.
Pour the well-drained U.S. Red Lentils with the garlic and shallots into a food processor.
Pulse shortly until the U.S. Red Lentil is roughly chopped.
Remove from the food processor and add the yogurt.
Combine with a spatula and season with salt, pepper, and smoked paprika.
Method for Mushrooms:
Sauté the chopped garlic in the olive oil until translucent.
Add the mushrooms and sauté until done.
Season with salt and pepper.
Drain well to remove any mushroom juice.
Plating:
Combine the chopped U.S. Red Lentils with the sautéed chopped mushroom.
Arrange in a serving dish.
Optional: drizzle with olive oil and sprinkle with roughly chopped parsley and coarse sea salt.
