200gm Cooked U.S. Green Peas
1ea Egg
35gm All-Purpose Flour
8gm Baking Powder
40ml Olive Oil or your Favorite Oil
Salt as needed
Ground Pepper as needed
100gm Diced Smoked Salmon
10gm Chopped Shallots
5gm Chopped Dill
1ea Lime Zeste
100ml Sour Cream
Salt as needed
Ground Pepper as needed
For Garnish:
Dill Sprigs
Lime Zeste
Directions
In a blender combine the cooked U.S. Green Peas, egg, flour, and olive oil.
Season with salt and pepper.
Heat a non-stick pan medium hot.
Drop some U.S. Green Peas batter into the center and cook on both sides for 1 to 2 minutes.
Arrange the sour cream on top of the pancake and garnish with the salmon, dill, and lime zest.
Season with salt and pepper.
For serving place the U.S. Green Peas pancake onto the serving dish and add a dollop of the smoked salmon – sour cream mix.
Garnish with dill sprigs and lime zest.
Note: If the U.S. Green Peas batter is too thin: add more flour, if too thick, add a little water.
Instead of U.S. Green Peas, U.S. Green Lentils may be used.
