Ingredients
Yield: 10-12 servings
120 grams canned U.S. green peas, washed and drained
85 grams U.S. ground almonds
150 grams dark chocolate, finely chopped or grated
3 large egg yolks
¼ cup heavy cream or whole milk
zest of one small orange
3 large egg whites
pinch of salt
½ cup granulated sugar
confectioners’ sugar, for topping
Directions
Preheat oven to 375ºF (190ºC). Grease, line and grease an 8-inch (20 cm) round pan with parchment paper. Set aside briefly.
Put the U.S. green peas in the bowl of a food processor and pulse a few times until crumbly (but not mushy).
Transfer the crumbled peas to a medium-sized bowl and stir in the ground almonds, dark chocolate, egg yolks, milk (or cream), and orange zest. Mix well then set aside briefly. This mixture will be quite stiff.
- In another bowl, beat egg whites with salt until frothy. Gradually add the sugar and beat until soft peaks are formed. Fold half into the into the pea-almond mixture and blend well. Fold in the remaining meringue.
Pour the mixture into the prepared pan and bake for 40 minutes, or until done. Remove from oven and cool completely. Dust with confectioners’ sugar.
When ready to serve, slice into wedges. Serve warm with vanilla ice cream and/or whipped cream and fresh fruits (or fruit compote).
