Ingredients
- 2 tbsp Butter, unsalted
- 1 cup Onions, sliced
- ¼ cup Celery, sliced
- 1 tbsp Garlic, chopped
- ½ cup U.S. Red Kidney Beans, cooked and drained
- ½ cup U.S. Cranberry Beans, cooked and drained
- ½ cup U.S. Black Beans, cooked and drained
- ½ cup U.S. Chickpeas, cooked and drained
- 4 cups Mussels, steamed
- 1 ½ tbsp Dill, chopped
- 1 tbsp Parsley, chopped
- ½ tbsp Anise Seeds
- ½ cup White Wine
- 1 tbsp Lime Juice
- To taste, Salt
- To taste, Ground Black Pepper
- Crispy Baguettes or Garlic Bread
Directions
- Heat butter in a pot and add sliced onions.
- Sauté until translucent, then add garlic and anise seeds, continuing to sauté until fragrant.
- Add all the U.S. beans to the pot and mix well.
- Add steamed mussels and celery, then deglaze with white wine. Mix carefully and bring to a simmer.
- Cook until everything is heated through.
- Season with salt, pepper, and lime juice, then add dill and parsley.
- Toss carefully once more, then arrange in serving dishes and sprinkle with additional parsley.
- Serve with a crispy baguette or garlic bread and lime wedges.
