Picadillo with U.S. Black Beans
2 Tablespoons Cooking Oil
2 Cloves Garlic, minced
1 Medium Onion, minced
1 Small Bell Pepper, minced
500 g Ground Pork
1 Cup Cooked U.S. Black Beans
2 Medium Potatoes, peeled and chopped
Salt And Pepper, To Taste
Pinch Of Sugar
1 Stalk Scallion, chopped
- In a pan, heat the cooking oil. Add the garlic, onion and bell pepper and sauté until translucent.
- Add the ground pork. Cook until slightly brown in color.
- Toss in the potatoes. Simmer for 5 to 10 minutes then add the black beans. Season with salt, pepper and sugar. Mix well and cook briefly.
- Transfer to a serving platter then top with chopped green onions
